Making Greek yogurt at home is a straightforward process that requires some time and a few simple ingredients. Here's a basic recipe for making Greek yogurt:

Ingredients:
- 1 quart (4 cups) of whole milk (you can use low-fat milk if desired)
- 2 tablespoons of plain yogurt with active cultures (as a starter)

Instructions:

1. Heat the Milk: In a large pot, heat the milk over medium heat until it reaches a temperature of around 180°F (82°C). Stir occasionally to prevent scorching. Heating the milk helps to denature the proteins and create a thicker yogurt texture.

2. Cool the Milk: Once the milk reaches the desired temperature, remove the pot from the heat and let it cool to around 110°F (43°C). You can speed up the cooling process by placing the pot in a cold water bath.

3. Add the Starter: In a separate bowl, mix the 2 tablespoons of plain yogurt with a small amount of the warm milk. Stir until well combined. Then, add this mixture back into the pot of warm milk and gently stir to distribute the yogurt starter.

4. Incubate the Yogurt: Transfer the milk mixture into a clean glass container or yogurt maker. Cover it with a lid or plastic wrap. Keep the container in a warm place, like an oven with the light on or a warm spot on the kitchen counter, for about 6 to 8 hours. The longer it sits, the tangier the yogurt will become.

5. Strain the Yogurt: After the incubation period, you'll notice that the yogurt has thickened. If you want to make Greek yogurt, you'll need to strain it to remove the whey (liquid). Line a fine-mesh strainer with cheesecloth or a coffee filter and place it over a bowl. Pour the yogurt into the strainer and let it strain in the refrigerator for 2 to 4 hours or until it reaches your desired thickness.

6. Store the Greek Yogurt: Once strained, transfer the Greek yogurt into a clean container and refrigerate it. It will keep for about a week.
